Saturday Night Dinner: Herb-crusted Sea Bass with an Apple and Blue Cheese Salad with dried Cherries



Continuing on the theme of cooking up a nice simple meal over the weekend, Marie and I after picking up some groceries decided to cook dinner at her place. 


While Marie prepared the fish, I started working on putting the salad together. I had seen a recipe posted on the Pioneer Woman's blog (http://thepioneerwoman.com/cooking/2012/01/apple-pecan-and-blue-cheese-salad-with-dried-cherries/ ) that just called out to me as it looked so interesting and easy to make. The salad had a lovely combination of apples, pecans and dried cherries with crumbled blue cheese and the dressing was a dab of Dijon mustard, maple syrup, lots of olive oil, salt and pepper and a splash of cider vinegar.


While the salad had a lot going on in terms of flavour, the fish was gloriously simple. It's Marie's own tried and tested recipe. She added finely-chopped parsley and lemon zest to breadcrumbs, then lightly coated the sea bass with olive oil and covered it with the breadcrumb mixture and  fried it for about 4 minutes each side. I found that lemon zest enhances the taste of the sea bass without overpowering it.


Paired with some white wine and candles - you have a lovely albeit slightly romantic meal ready! Actually, it is quite a nice meal to cook for someone -  you should try it out :)
